  • 1 small red onion, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons white vinegar Can substitute with red wine vinegar.
  • 1 tablespoon sugar
  • to taste Salt and pepper
  • optional Fresh herbs (parsley or basil) Garnish for serving.

Preparation

  • In a large mixing bowl, combine the diced tomatoes, sliced cucumber, and thinly sliced onion.
  • In another bowl, whisk together olive oil, white vinegar, sugar, salt, and pepper until completely blended.
  • Pour the dressing over the vegetables and gently toss to ensure they are evenly coated.
  • Allow the salad to rest for at least 15 minutes before serving to help the flavors meld beautifully.
  • Garnish with fresh herbs if desired and serve chill.

Notes

To store leftovers, keep in an airtight container in the refrigerator for up to 2 days. Separate the dressing until ready to serve to maintain crispness. Allow the salad to sit longer for more pronounced flavors.
