  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter, softened
  • 1 cup milk
  • 4 large eggs
  • 2.5 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt

For the Strawberry Filling

  • 1.5 cups fresh strawberries, hulled and sliced
  • 0.5 cups granulated sugar
  • 2 tablespoons lemon juice
  • 1 cup heavy cream (for whipped topping)

Preparation

  • Preheat the Oven: Heat your oven to 350°F (175°C).
  • Prepare Cakes: Grease and flour two round cake pans.
  • Mix Dry Ingredients: In a bowl, combine flour, baking powder, and salt.
  • Cream Butter and Sugar: In a separate large bowl, beat together butter and sugar until light and fluffy.
  • Add Eggs and Vanilla: Incorporate the eggs one by one, then stir in vanilla extract.
  • Combine Mixtures: Gradually add the dry mixture to the wet mixture, alternating with milk until smooth.
  • Bake: Divide the batter between the prepared pans and bake for 25-30 minutes. Insert a toothpick to check; it should come out clean.
  • Cool the Cakes: Allow layers to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Prepare Strawberry Filling

  • In a bowl, mix sliced strawberries, sugar, and lemon juice. Let sit for 15 minutes; then, gently fold in whipped cream.

Assembly

  • Place one cake layer on a serving plate. Spread a layer of strawberry filling on top, then place the second cake layer on top and frost the entire cake with the remaining filling.
  • Garnish and Serve: Add extra strawberry slices on top for decoration. Slice and enjoy!

Notes

For a lighter option, consider using Greek yogurt instead of heavy cream or swap out sugar for a sugar alternative like honey or agave syrup to lighten the sweetness.
