  • 1 lb ground beef can be swapped for turkey
  • 2 medium sweet potatoes, diced can be substituted with regular potatoes
  • 1 medium bell pepper, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh cilantro for garnish (optional)

Preparation

  • Heat a drizzle of olive oil in a large skillet over medium heat.
  • Toss in the chopped onion and bell pepper. Sauté until softened.
  • Add minced garlic and cook for an additional minute, letting the flavors meld.
  • Crumble in the ground beef, cooking until it's browned and fully cooked through.
  • Stir in the diced sweet potatoes, chili powder, cumin, salt, and pepper. Mix well.
  • Cover the skillet and allow to cook for about 10-12 minutes, or until the sweet potatoes are tender, stirring occasionally.
  • Finally, add the black beans and corn, mixing them in, and cook for another 3-5 minutes until everything is heated through.

Serving

  • Serve hot, garnished with fresh cilantro if desired.

Notes

For an appealing presentation, consider serving the skillet dish family-style right in the pan or plated individually.
