  • 4 pieces cod fillets
  • 2 tablespoons olive oil
  • 4 pieces ripe tomatoes, diced
  • 2 cloves garlic, minced
  • 1/2 cup fresh basil, chopped Substitute with dried basil if needed
  • 1/2 cup white wine A dry variety works best
  • Salt and pepper to taste

Preparation

  • Heat the olive oil in a large skillet over medium-high heat.
  • Season the cod fillets generously with salt and pepper. Once the oil shimmers, lay the fillets in the skillet and cook for about 4-5 minutes on each side, until they are golden and cooked through. Transfer them to a plate and set aside.

Cooking the Sauce

  • Using the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  • Toss in the diced tomatoes and allow them to cook until they begin to soften, around 2-3 minutes.
  • Pour in the white wine and let it simmer for about 5 minutes, allowing the flavors to concentrate.
  • Stir in the fresh basil, adjusting the seasoning if necessary.

Final Assembly

  • Return the cooked cod to the skillet and gently coat it with the tomato basil sauce before serving.

Notes

To serve, plate the cod on a bed of the vibrant tomato basil sauce. Consider garnishing with an extra sprinkle of fresh basil. Pair with rice, roasted potatoes, or a green salad. A chilled glass of white wine is an ideal accompaniment. For leftovers, store in an airtight container in the refrigerator and consume within three days.
