Raspberry Peach Popsicles

Ingredients
  

For the peach mixture

  • 1.5 cups peaches, diced (fresh or frozen) Use ripe peaches for the best flavor.
  • 0.5 unit banana Helps create a creamy texture.
  • 0.5-0.75 cups orange juice Adjust based on desired sweetness.
  • 1/8-1/4 tsp vanilla extract
  • 1 Tbsp honey or agave Adjust based on sweetness preference.

For the raspberry mixture

  • 2 cups raspberries (fresh or frozen)
  • 2-3 Tbsp honey or agave To taste.
  • Juice of 1/2 lemon lemon juice Adds tartness and balances the sweetness.
  • 1/2 cup water

Preparation of Peach Mixture

  • In a blender, mix together the peaches, banana, honey/agave, orange juice, and 1/8 teaspoon vanilla extract until smooth. Taste and adjust sweetness if necessary. Pour the peach mixture into a liquid measuring cup.

Preparation of Raspberry Mixture

  • To the same blender (no need to rinse!), add the raspberries, lemon juice, honey/agave, and water. Blend until smooth. Taste and adjust for sweetness or tartness.
  • Strain the raspberry puree through a fine mesh sieve to remove the seeds, pouring it into another liquid measuring cup.

Popsicle Assembly

  • Using a funnel or spoon, alternate pouring the raspberry and peach mixtures into popsicle molds for distinct layers. Alternatively, fill half of each mold with peach and then top with raspberry mixture.
  • Cover the popsicles and insert sticks. Freeze for at least 4-5 hours, until completely solid.

Serving

  • To release the popsicles, run the mold under cold water for a few seconds and gently wiggle the sticks. Serve immediately or store extras in an airtight bag in the freezer for up to one month.

Notes

For best results, use fresh ingredients and ensure your utensils and containers are clean. Customize with other fruits or add coconut milk for creaminess.
