  • 12 oz penne or rotini pasta Feel free to swap out the pasta type.
  • 1 tbsp olive oil
  • 14 oz kielbasa sausage, sliced
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 2 cups chicken broth (low sodium)
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1 1/2 cups shredded cheddar or mozzarella cheese
  • to taste Salt
  • to taste pepper
  • 1/2 tsp smoked paprika (optional)
  • for garnish Fresh parsley

Cooking Steps

  • Heat the olive oil in a large pot over medium heat.
  • Add the kielbasa and cook for 4–5 minutes until browned.
  • Stir in the garlic and onion, sautéing for about 2 minutes until fragrant and translucent.
  • Pour in the chicken broth and heavy cream, bringing the mixture to a light simmer.
  • Add the pasta, then stir, cover, and simmer for 10–12 minutes, stirring occasionally until the pasta reaches al dente.
  • Mix in Parmesan cheese until melted and the sauce is creamy. Add the cheddar or mozzarella cheese and stir until it melts completely.
  • Season with salt, pepper, and smoked paprika if desired.
  • Garnish with fresh parsley and serve hot. You can top it off with extra grated Parmesan for an added touch!

Notes

To keep leftovers fresh, store in an airtight container in the refrigerator for up to a week. For freezing, allow the pasta to cool completely before putting it in a freezer-safe container; it can last up to three months.
