  • 4 pieces cod fillets (6 oz each) Any firm white fish like halibut or tilapia can work as a substitute.
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic (minced) Sauté until fragrant.
  • 3 tbsp freshly squeezed lemon juice
  • 1 piece lemon (zest)
  • salt and pepper (to taste)
  • 2 tbsp fresh parsley (chopped)

  • Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
  • In a large skillet over medium heat, melt the butter and olive oil together until it starts to foam.
  • Add minced garlic and sauté until fragrant, about 30 seconds—be careful not to burn it!
  • Place the seasoned cod fillets skin-side down in the skillet. Cook for 4-5 minutes until the skin is golden brown and crispy.
  • Gently flip the fillets, pour in the lemon juice, and cook for another 3-4 minutes, or until the fish flakes easily with a fork.
  • Remove from heat, garnish with chopped parsley and lemon zest, then serve immediately.

Notes

For the best results, ensure your pan is hot enough before adding the fish. If the skin isn’t crisp after 4-5 minutes, give it another minute before flipping. Consider adding a pinch of red pepper flakes while sautéing the garlic for extra flavor.
