Ingredients
  

For the Pineapple Layer

  • 1.5 cups cubed pineapple
  • 1 cup diced mango
  • 0.5 cups coconut milk (full-fat canned recommended) for the creamiest texture
  • 1 tablespoon honey or agave optional, adjust based on sweetness preference

For the Strawberry Layer

  • 2.5 cups strawberries
  • 0.25 cups orange juice

Preparation

  • Blend the Pineapple Layer: In a blender, combine the pineapple cubes, diced mango, and coconut milk. Puree until completely smooth. Taste and blend in honey or agave if you'd like additional sweetness. Pour the mixture into a measuring cup and set aside.
  • Blend the Strawberry Layer: In the same blender, add the strawberries and orange juice. Blend until smooth, adjusting sweetness with honey or agave if needed.
  • Layer the Mixtures: In popsicle molds, alternate scoops of the pineapple and strawberry mixtures. For distinct layers, use a small funnel or spoon—this will prevent the colors from blending too much.
  • Freeze: Insert popsicle sticks and freeze until completely solid, usually about 3-4 hours.
  • Unmold and Serve: To release the popsicles, run the mold under cool water for a few seconds and gently wiggle each stick until they loosen. Enjoy them immediately or store for later!

Notes

These popsicles are best enjoyed on their own, but can also be served in a chilled glass with coconut syrup or paired with fresh fruit salads. For storing leftovers, wrap in plastic wrap or place in a freezer-safe bag; they will stay fresh for up to 2-3 weeks.
