Ingredients
  

2 cups fine cornmeal

1 cup all-purpose flour

1 1/2 cups buttermilk

1 egg

2 tbsp vegetable oil or bacon grease (for cooking)

1 tsp baking powder

1 tsp salt

Optional: Maple syrup, honey, or butter for serving

Instructions
 

1️⃣ Prepare the Batter:

  • In a large mixing bowl, combine 2 cups of fine cornmeal, 1 cup of all-purpose flour, 1 tsp baking powder, and 1 tsp salt.
  • Gradually add 1 1/2 cups of buttermilk and 1 egg, whisking until smooth and pourable.

2️⃣ Heat the Skillet:

  • Preheat a cast-iron skillet or griddle over medium heat. Add 2 tbsp of vegetable oil or bacon grease, allowing it to heat thoroughly.

3️⃣ Cook the Hoe Cakes:

  • Using a spoon or ladle, pour batter into the skillet to form 3-inch round cakes. Cook for 2-3 minutes until the edges are golden and bubbles form on the surface. Flip and cook for an additional 2-3 minutes.

4️⃣ Serve Hot:

  • Place the cooked hoe cakes on a paper towel-lined plate to drain excess grease. Serve warm with your favorite toppings, such as maple syrup, honey, or butter.
