  • 1/2 cup Greek yogurt or sour cream Dairy-free alternative can be used.
  • 2 tablespoons lime juice Can substitute with lemon juice.
  • Salt and pepper: to taste

Preparation

  • In a large bowl, combine the shrimp, diced cucumber, sliced green onion, and chopped herbs.
  • In a separate bowl, whisk together the Greek yogurt (or sour cream), lime juice, salt, and pepper.
  • Pour the creamy dressing over the salad ingredients and toss gently to combine.
  • Chill in the refrigerator for at least 30 minutes before serving, allowing the flavors to meld.

Notes

To keep leftovers fresh, store them in an airtight container in the refrigerator and enjoy within 2-3 days. Freezing is not recommended due to texture changes in cucumbers.
