Ingredients
  

For the Garlic Butter

  • 1/2 cup unsalted butter (1 stick)
  • 4 cloves fresh garlic, minced Use fresh for best flavor.
  • 2 tbsp lemon juice Freshly squeezed.
  • 2 tbsp fresh parsley, chopped For garnishing.

For the Cod

  • 4 pieces fresh cod fillets About 6 oz each.
  • Salt and pepper To taste.

Preparation

  • Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  • Melt the butter in a small saucepan over medium heat.
  • Sauté the minced garlic in the melted butter until fragrant, about 1 minute.
  • Stir in the freshly squeezed lemon juice and remove from heat.

Baking

  • Place the cod fillets in the greased baking dish, then pour the garlic butter mixture evenly over them.
  • Season with salt and pepper according to your taste.
  • Bake for 12-15 minutes or until the fish flakes easily with a fork.
  • Garnish with chopped parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the oven at 350°F (175°C). For longer storage, freeze in an airtight container for up to 3 months, thaw in the refrigerator before reheating.
