  • 1 cup imitation crab meat, shredded Substitute with fresh crab if preferred.
  • 1 whole avocado, diced Squeeze lime juice over it to prevent browning.
  • 1/4 cup green onions, chopped
  • 1 tablespoon sesame seeds

Dressing Ingredients

  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce Use gluten-free soy sauce for a gluten-free option.
  • 1 teaspoon sugar
  • to taste salt and pepper

Preparation

  • In a large bowl, combine the sliced cucumber, imitation crab meat, diced avocado, and chopped green onions.
  • In a small bowl, whisk together the rice vinegar, soy sauce, sugar, salt, and pepper until smooth.
  • Pour the dressing over the salad and toss gently to ensure everything is coated evenly.
  • Sprinkle sesame seeds on top before serving.
  • Chill the salad for at least 30 minutes to allow the flavors to meld beautifully.

Notes

Store leftovers in an airtight container in the refrigerator for 1-2 days. Keep the dressing separate to maintain freshness.
