  • 2 cups cooked rice (preferably day-old for best texture)
  • 2 pieces eggs
  • 2 tablespoons soy sauce Tamari can be used as a gluten-free alternative.
  • 1 cup mixed vegetables (such as carrots, peas, and bell peppers) Feel free to swap in any frozen or fresh veggies you have on hand.
  • 2 tablespoons green onions (chopped) For garnish.
  • 1 tablespoon vegetable oil

Preparation

  • In a large skillet, heat the vegetable oil over medium heat.
  • Add the mixed vegetables and sauté for 2-3 minutes until tender.
  • Push the veggies to one side of the skillet. Crack the eggs into the other side and scramble until fully cooked.
  • Stir in the cooked rice along with the soy sauce, mixing everything until well combined.
  • Let it cook for an additional 3-5 minutes, allowing the rice to heat through.
  • Garnish with chopped green onions before serving warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For freezing, portion into freezer-safe bags or containers and freeze for up to 2 months. When reheating, ensure rice reaches at least 165°F for safe consumption.
