Ingredients
  

Salad Ingredients

  • 2 large large cucumbers
  • 1 cup cherry tomatoes halved
  • 8 oz fresh mozzarella balls
  • a handful fresh basil leaves

Dressing Ingredients

  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • to taste salt
  • to taste pepper

Instructions
 

Preparation

  • Slice the cucumbers into thin rounds and place them in a large salad bowl.
  • Halve the cherry tomatoes and toss them into the bowl with the cucumbers.
  • Add the fresh mozzarella balls and sprinkle in the basil leaves.

Dressing

  • In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  • Drizzle the dressing over the salad and gently toss everything together to combine.

Serving

  • Serve immediately for the freshest taste, or chill in the refrigerator for a refreshing treat later.

Notes

For added flavor, sprinkle toasted pine nuts or sunflower seeds on top. Let the salad sit for 15 minutes after tossing to meld the flavors. Store leftovers in an airtight container in the refrigerator for up to 2 days, but do not add dressing until serving to avoid soggy cucumbers.
