  • 4 pieces Salmon fillets Use skin-on for extra crisp
  • 1/2 cup Parmesan cheese Freshly grated is best
  • 3 cloves Garlic Minced
  • 1 cup Cherry tomatoes Halved
  • 4 cups Spinach Fresh
  • 1/4 cup Fresh basil Chopped for garnish
  • 2 tablespoons Butter For cooking
  • to taste none Salt Seasoning for salmon
  • to taste none Pepper Seasoning for salmon

Preparation

  • Season the salmon fillets generously with salt and pepper.
  • In a large skillet over medium heat, melt a tablespoon of butter.
  • Add the salmon fillets and sear them for about 4–5 minutes on each side, until they’re fully cooked. Once done, remove them from the skillet and set aside.
  • In the same skillet, add minced garlic and sauté it for 30 seconds, until fragrant.
  • Toss in cherry tomatoes and spinach, cooking until the spinach has wilted and the tomatoes are soft.
  • Pour in heavy cream and sprinkle in the parmesan cheese, stirring until the mixture is smooth and creamy.
  • Return the salmon to the skillet, spooning the sauce over to coat.
  • Serve hot, garnished with fresh basil for an extra burst of flavor.

Notes

For a lighter version, you can omit the parmesan and substitute fresh spinach with kale. To enhance flavor, marinate salmon in lemon juice before cooking.
