  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Corn or flour tortillas

Fresh Toppings

  • diced tomatoes

Instructions
 

Preparation

  • Heat olive oil in a skillet over medium heat.
  • Add the chicken breasts and cook for about 5-7 minutes on each side, or until fully cooked.
  • In a small bowl, mix chili powder, cumin, garlic powder, salt, and pepper. Sprinkle the seasoning over the cooked chicken, ensuring it’s well coated. Cook for another minute.
  • Remove the chicken from the skillet and let it rest for a few minutes. Shred it with two forks or chop it into bite-sized pieces.
  • In the same skillet, lightly warm the tortillas, about 30 seconds on each side.
  • Layer shredded chicken on the tortillas and top with your favorite fresh toppings.

Notes

You can substitute chicken with tofu or grilled veggies for a vegetarian option. For the best texture, use fresh tortillas when reheating.
