  • 1 pound ground beef Use freshly ground beef for best flavor.
  • 1 can cream of mushroom soup (10.75 oz) Cream of chicken soup can be used as a substitute.
  • 1 can diced tomatoes (14.5 oz) with juice
  • ½ cup long-grain white rice, uncooked
  • ¾ cup shredded mozzarella cheese Other cheeses can be used as alternatives.
  • Salt and pepper, to taste

Preparation

  • Crumble the ground beef into a skillet over medium-high heat and cook until browned. Break it apart as it cooks to ensure even texture.
  • Drain excess grease to keep the final dish from becoming too heavy.
  • Stir in the cream of mushroom soup, diced tomatoes with their juice, and the uncooked rice. Mix until fully combined.
  • Cover the skillet, reduce the heat to low, and let it simmer. Stir occasionally. Cook for about 15 minutes, or until the rice softens.
  • Preheat the oven broiler. Transfer the mixture to a casserole dish and spread evenly.
  • Add the shredded cheese on top and place under the broiler until melted and lightly toasted.
  • Season with salt and pepper as desired and serve warm.

Notes

For a richer flavor, sprinkle extra cheese or Worcestershire sauce on top before serving. Store leftovers in an airtight container for up to 3 days.
