Preparation

  • In a large pot, brown the ground beef with the chopped onion over medium heat. Drain any excess fat.
  • Add the diced potatoes and beef broth to the pot. Bring the mixture to a boil.
  • Reduce the heat, cover, and let it simmer until the potatoes are tender, approximately 20 minutes.
  • Stir in the heavy cream and shredded cheddar cheese until everything is melted and smooth.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with parsley and a sprinkle of extra cheese if desired.

Notes

This soup can be made a day in advance for enhanced flavor. Store leftovers in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 3 months.
