Ingredients
  

For the Chicken

  • 2 pieces chicken breasts
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper

For Assembly

  • 4 pieces tortillas (corn or flour) based on preference
  • pico de gallo as needed for topping
  • shredded lettuce as needed for topping
  • sour cream as needed for topping
  • cheese (your choice) as needed for topping
  • avocado as needed for topping

Instructions
 

Preparation

  • In a bowl, combine olive oil, chili powder, cumin, salt, and pepper. Coat the chicken breasts thoroughly with the marinade and let it rest for at least 30 minutes.

Grilling

  • Preheat your grill to medium heat and place the marinated chicken on the grill.
  • Grill the chicken for about 6-7 minutes on each side until fully cooked (an internal temperature of 165°F or 74°C).
  • Let the chicken rest for a few minutes before slicing it into strips.
  • While the chicken is resting, warm the tortillas on the grill for a minute or two.

Assembly

  • Layer sliced chicken on each tortilla, followed by generous toppings of pico de gallo, shredded lettuce, sour cream, cheese, and avocado.

Serving

  • Serve immediately and enjoy the fiesta!

Notes
